There are a few different speeds to go while water skiing, depending on what you are doing. If you are just going on two skis at a beginner's pace you will want to go about 20-30 mph. If you are Solomon skiing (one ski, advanced) you will have you go a bit faster, about 30-35 mph. But if you are barefooting (very advanced skiers only) you will want to travel at about 40 mph at least.

How fast does a 160HP jet ski go?

It depends a lot on the weight of the jet ski. There's no way to determine the speed from just the horsepower. Most likely though, a 160 HP jet ski would be a fairly high power jet ski with a top speed of around 50 to 55 mph.

Why will my jet ski only get to 5000 rpm in water and not full speed although with hose hooked up it will get to 7950 and idles fine?

water pump is clogged taker apart and clean that bad girl up. the thermostat is restricting the speed when it over heats.
