The vows and rings are pretty much symbols in any ceremony and are used to show a giving of one's whole self to another, and them doing the same in return. The marriage candle or unity candle is a symbolic joining of two families, through the promises and vows given and received. It's not a compulsory thing to include and some parishs don't like this little ceremony, but at the end of the day, its up to the bride and groom. Other symbols could include flowers, music, decoration. The sacrament of marriage is relatively personal - it is given by the bride to the groom and vice versa. It's not administered by the priest, but witnessed by him instead. Having said that then, the symbols for the sacrament of marriage are really up to the couple and what they choose to use as symbols.

Current Catholic thinking is that the outward sign of the sacrament of matrimony is the mutual consent of the contracting parties, a truth which was originally expressed in the formulation matrimonium facit consensus [the agreement makes the marriage].

There will always be a rite, and in individual cases the rite may also be considered the outward sign, but the rite may vary, the mutual consent is both independent of that rite and essential (where the rite is only adventitious).

Matrimony is a difficult sacrament to analyse, since each party confers it on the other (a unique arrangement among the sacraments); but the problems associated with formulating matrimony have not proved serious practical obstacles.

I have used the term outward sign rather than symbol because symbol has several natural language meanings which are not always helpful when discussing the form and matter of the sacraments.
