Water is a polar molecule. This is because the oxygen atom is slightly electronegative and the hydrogen atoms electropositive. When dissolution of ionic compounds occurs, for example of salt (sodium chloride), the positive hydrogen atoms in the water molecule are attracted to the negative ion, chlorine, and so, in a simplified sense, surround it and overcome the positive force of the sodium.
