By the Western calendar, Sabbath begins at sundown on Friday evening. Sabbath ends on sundown on Saturday evening. Since "sundown" is a variable time, one must observe the sunset in one's area.
The Biblical basis for this is found in Genesis 1:5. "...So the evening and the morning were the first day." Judaism reacons it's day by this declaration. Sabbath means "seven", so the word Sabbath is the seventh day. Even on the Roman calendar that we use today, Saturday is the seventh day.
