If its vegetable oil, it loses its viscosity every time its used and will go dark on you. Peanut oil will last longer. I keep oil until it gets dark or until I use it to cook chicken or pork in, then its discarded. Bacon grease will not go bad ever. If I use oil to cook fish in, it can only be used for fish from that point on, because it retains the salt and fish taste. Commercial resturants use peanut oil in their fryers bacause it is free from animal fats. (muslims dont eat pork). They replace these oils once a week and the used oil is recycled into biodiesel fuels. Hooweestik.

If you are interested in taking excess oil and giving it for other use other than basic disposal, you can try contacting a company that takes cooking oil and processes to biodiesel fuel manufacturers or soap manufacturers.
