Since she was about 13 at the time, and the play was written in 1595 she was born in 1582 (estimate).
She is not a real person. She was never born, and cannot die. She is recreated every time someone puts on the play.
Juliet Capulet is not based on a real person either.
There is some allusion to the fact that Juliet is born on the 31st of July. Supposedly she was born on "Lammas Eve" at night, thus she would be born on the 31st of July.
The day of her wedding. (she didn't actually die, she wasn't a real person. Just someone Shakespeare created for his play. There never was a real Juliet Capulet!)
she was born on July 31st
Nobody knows this.
Shakespeare lived from 1564 to 1616. We know the date of his death (April 23,1616) because it is recorded in his burial records. His date of birth is not as certain, because we guess it from the date of his baptism which we do know.
Because the Capulet's and the Montague's are total foes because their servants, sons, cousins, and the fathers all fight against each other. Since Juliet is from the Capulet's, and Romeo is from the Montague's, she beg her forgiveness for marring their family's enemy.
Juliet was given the sleeping potion on Tuesday, and was supposed to drink it on Wednesday night, but Lord Capulet changed the wedding date to Wednesday so Juliet drank it Tuesday night. Juliet woke up late Thursday night or early Friday morning and killed herself. So she was sleeping for about two days, forty-two hours to be exact.
It was a Sunday, late in July. Nobody knows the exact date or the year--there is no clue as to these things in the text.
The wedding was originally scheduled for Thursday, but Capulet got so excited by Juliet's apparent caving in that he changed the date at the last minute to Wednesday. Any father of the bride who tried that nowadays would be shot dead by his daughter.
Paris
He changed the date of the wedding to a day earlier.
Capulet moves the wedding date up
Since Juliet is a fictional person, she did not have a marriage certificate or parish register in which her marriage date was recorded. The play does not give any date for the action. However, since Juliet's previous encounters with Romeo involved meeting him as an uninvited guest at a party and as an even more uninvited guest in her parents' back yard, the first time she adn Romeo actually agree to meet is when they get married. In this sense the answer to "What date?" is "the first". Juliet Capulet got married on her first date.
