The 'S' is believed to stand for Simpson, which was his mother's maiden name. Some say it didn't stand for anything. It was just put there to indicate 'US', as in Uncle Sam, and also to echo his nickname 'Unconditional Surrender'.

Grant's real name was Hiram Ulysses Grant. However, when he was nominated for West Point, the Congressman who nominated him, wrote his name as Ulysses S.
