According to the Bible, on the sixth day, God created mankind and livestock (or animals that live on land). On the seventh day He rested.
Another View:
Some think God created the Universe in the beginning and then stopped creating. Others believe God is still creating. The Christian Bible mentions Adam and Eve as the last thing God created and doesn't really mention his "creating" anything else but that doesn't necessarily mean he hasn't created anything since. Of course other religions have other things to say about how God/Goddess or higher power created and continues to create.
Answer
According to the Genesis account of creation, the last thing God created was woman. For, even though she was 'taken out of man' this surely was done by God as a creative operation. The rest of Day 7 was a rest of completion, not a rest of tiredness. So, both from the silence of scripture and from the repeated references to the original creation both in terms of it being complete and perfect it can be sensibly inferred that no more creative acts either occurred or were necessary.
It must be remembered that as part of the original creation DNA was created to enable plants and animals to reproduce 'after their kind'. Since this also included the ability to adapt to varying environments, no further creation was necessary.
On a completely different plane, the new birth, when a person becomes a 'new creature' in Christ - this is every single time the creation of new spiritual life, where previously there was spiritual darkness and death. Believers are thus said to be a 'new creation' in Christ (2 Corinthians 5:17). So, the last thing God created was the last new believer, only moments ago whenever this is read, and very many from the time this was first entered into the computer.
