Thorin's sword, acquired from the troll cave was Orcrist, the Goblin-Cleaver, called by the Goblins/Orcs Biter. Gandalf's sword was Glamdring, Foe-hammer, called by the Orcs Beater. Bilbo named his large knife Sting.
They are Orchrist and Glamdring. Thorin had the first one and Gandalf the second. The goblins call them Beater and Biter. Bilbo discovers that his dagger is also magical when it glows in the presence of the goblins.

We have no names given for any of the orcs'/goblins' weapons. I assume you mean the Elven swords which the protagonists fount in the trolls' cave. Those are Glamdring (Sindarin "Foe-hammer"), taken up by Gandalf, and Orcrist("Goblin/Orc-cleaver"), taken up by Thorin. Bilbo got his sword (really a dagger for Elves) from the same place, and later named it Sting.

The "knife" is probably referring to Sting, because it was mentioned that the weapon, which is most appropriately called a long knife or short sword, wouldn't have been much more than a pocket knife to the trolls. The Elvish name for Sting was Maegnas which means "sharp point". It seems purely coincidental that BIlbo decides to call the sword Sting after his encounter with the Spiders, since as a blade of Gondolin, it likely was called "Sting" previously as well.

As for the "sword" - well there were two of them.

Gandalf claimed Glamdring, which means "Foe Hammer". The orcs called it Beater. It would be classified as a two-handed sword and was forged for Turgon, the king of Gondolin.

Thorin claimed the second sword, which was named Orcrist, the "Goblin Cleaver". It was called Biter by the orcs. It isn't known for whom the blade was forged, but one of the possible bearers was Ecthelion, which would also mean that both of the swords found in the troll hoard were responsible for slaying Balrogs.

Orcrist - The name means "Goblin Cleaver" and it was also forged in the first age, near the same time as Glamdring, as evidenced to the swords being called "mates". There is no specific record as for whom the sword was made, and it was likely taken along with the others during the fall of Gondolin.

Sting - The Elven long knife wasn't named, which indicates that it was probably not the weapon of anyone of importance, or because it was likely just a secondary weapon, wasn't deemed important enough to name. "Sting" is what Bilbo called it, and he later had the name added in runes by the smiths in Rivendell.
