You're British police man round the time of Jack the ripper would of worn a white buttoned grand-dad shirt underneath, black trousers, with braces and belt. Polished black boots. Over that an eight-buttoned high collared police coat done up to the neck, with another black leather brass belt round the waist. He'd then have a six panelled custodian helmet on his head.

Further equipment would of been a Bulls eye lantern at night, wooden truncheon carried in the tail of his police coat, pair of handcuffs, a whistle and pencil and notepad, and whitechapel here he comes.

They were called lots of names like peelers ,bobbies ,blue devils ,rozzerz ,coppers and pigs.

Peelers and bobbies yes, coppers probably, rozzer maybe; but I think "pigs" date from the 1960s and coined by far-left anti-establishment types. The name rather depends on how you view the Police: "peeler" and "bobby" being fairly benevolent.
