Responding from the point of view of paper crafts, I would highly encourage introducing her to the art of Japanese paper-folding or Origami. While often looked upon as trite by many, Origami has become extremely intense and complex in the past decades as Origami masters vie with each other to push the envelope of what can be done with paper. Origami combines problem-solving, spatial thinking, dexterity, patience, imagination and beauty. It has such varied levels of difficulty that finding new projects is never a problem, and once the basic principles are mastered the origamist can start making their own creations. As well, origami pieces make fine decorations, gifts and symbolic gestures as well as a hobby that one can do anywhere.
I would also recommend scrap-booking, another popular past time that is not only creative but allows one to make a sort of super diary or personal history book that can be kept for oneself or given as a gift. There are even scrapbook groups, lessons and societies to help teach and promote this craft.
