Most commonly, sweet potatoes are harvested when the plant dies off, often as winter approaches and frosts begin. They can be harvested before this by cutting tubers from the plant. If the cut tuber exudes a milky juice that turns blackish upon drying then the tubers are not ready. If it dries clear, they are mature.

Sweet potatoes can be harvested from the time the leaves turn yellow till the plant dies. The longer they stay in the ground after the leaves turn the more nutrient rich they will be but must be picked once the plant dies to prevent rot.

Sweet potatoes should be ready to harvest at the time of the first frost. They will store longer if you dig them right before frost is forecast. Most sweet potatoes are ready about 100 days after planting.

Sweet potatoes are on the list of plants toxic to rabbits :http://www.adoptarabbit.com/articles/toxic.html Actually, sweet potatoes are NOT toxic to rabbits. White and red potatoes are, but not sweet potatoes. They are actually good for them, and we give them often as treats. They help tighten up stools when a rabbit has diarhea and they readily eat them when you are trying to entice a rabbit that is not eatting, to start again.
