It depends really on your talent tree. Beast mastery is A bear or an ape because they have increased HP and armour. It takes a while to kill though. If you are a marksman hunter you want a spider because they have a webbing ability so you can do aimed shot alot. Survival is a raptor because they have an ability where they can do a dot damage over time ability and survival is 100% DOTS
Hunters, like any other class can ride Mounts, which are bought at cities, such as Stormwind. Hunters are the only class that are allowed to have a combat pet that is nameable and can be any monster (as long as it is the same level as you). When you are a certain level you can accept a quest which will allow you to capture these monsters. The "pets" you receive do not count as Mounts as you cannot ride them, they follow you around and attack other things, only. Note you must be a certain level to get a mount, and are around one gold each, so don't expect to get one at level 15.
I find that the best tanking pet would be a bear or an ape. The best instance/dps pet would be a cat a scorpion or a raptor. The best PvP pet would be a plainstrider because of the blinding ability or a spider because of the net they can make.
At level 10, Hunters get a quest from their trainers, and after going through that quest chain which involves the "training taming" of three pets which aren't meant to be actually PLAYED with, you get the ability to tame, heal, revive and feed your pet.
Many Hunters don't get their pet until 12-15 the first time through because they don't realize the importance of the quest chain the trainer just gave them.

You simply re-summon it. If you are talking about a hunter pet that dies in battle, then you have to use the hunter spell "Revivie Pet".
In order to obtain a pet that fights by your side in battle, yes you do need to be a hunter. However, you can get "Companions" which are creatures you pay for that don't do much, and just follow you around.
Revive pet is a skill you get as soon as you learn how to tame pets. The skill will be located in your spell book.
No, there are no dalmations in World of Warcraft. There is only one hunter pet that is even close to a real dog (other than wolf) and that is the Mastif (coming in Cataclysm.
Early on, your Hunter gets the ability of "tame beast". Use this ability on a tameable beast and don't move or attack or it won't work!

The Hunter pet becomes available from level 10 on, so at any level at or after 12 you can do the quests and get hunter pet skills. If you mean that your pet is still level 10 and you'd like a higher level pet, simply take it with you, it will level soon enough. You can also abandon it and tame a new (level 12) pet.
Pets in World of Warcraft can only level up if they are lower level than their hunter master, and by attacking foes that would give the master experience. For instance, a level 50 pet of a level 50 hunter would not level because then it would be higher level than the master, which does not happen. And if a level 50 pet attacks level 30 creatures, it gets no experience because the mobs are too low level.
