It might depend upon the variety of fig. I pick mine when the fruit has turned color and "drooped" a little from the stem. Also check on the softness of the fig. If it is too firm, it is not mature or sweet. Too soft, and it may be fermenting. Eat a few to determine when yours is sweet. You may pick them a wee bit too firm and leave them at room temperature to further ripen, soften and develop sweetness.

Always wear long sleeves to avoid skin irritation (I actually blister!) or take a shower soon after harvesting your figs. I find using scissors to cut the small fig stems is preferable to trying to snap the stem sideways. If you try to just pull the fig off, most likely the flesh will rip apart. Having someone assist you by bending the very pliable branches down to your reach works great.
