Rhubarb is ripe when the stalk is a dark red. If its still mostly green, it's not ready to be picked yet, unless you want it really sour!
Actually, there are two types of rhubarb and several varieties of each type. Red rhubarb emerges with a red stalk that is completely red. It's ready to pick whenever you're ready to pick it, and a rhubarb that is constantly harvested will continue to send out new stalks until it gets too cool at night.
Green rhubarb emerges green and will never turn completely red, no matter how long you wait. Some varieties will have a reddish base when the stalks get very thick.
Both varieties do not get 'sweeter' as the stalks get bigger.
When the stems are a bright red and the leaves a bright green, pick the rhubarb!!

You can not eat the leaves, they are poisonous
Rhubarb is ready to pick at any time after the leaves appear - as the leaves/stems get older they get past picking as they become tough and stringy.
when they are green
That is the best time if it is ready to be harvested
They are ready when the outside husk turns brown and the inside is yellow. They usually fall off the plant when they are ready and will pick easily too.
The stems will be long and the tops will be bushy. If it looks like the picture on the seed packet, it's ready to pick.
We where introduced at a party.
You don't make rhubarb red, that's the way it naturally grows. When it is grown and ready to be picked it is already red... Sorry but that answer is incorrect, some are red some are green. Is there a way to change it to make a green plant grow red ?? Sure next year we can pick a reddish crown ?? but what about now whilst it is growing large ??.. Mal
