That is a double edged sword. If you want to keep your peach tree dwarfed or stunt its growth then you would summer prune just after harvest. If you want a normal size tree then you would wait until the tree is dormant in winter. I prune mine around valentines day.

Pears should be proned at the coldest possible time. your biggest fear is fire-blight which is a disease cause by bacteria which enters the tree via wounds. as for how- thin out the branches, preserve the ones growing horizontaly and cut off (right at the base) the ones growing verticly. good luck

Pear trees should be pruned either before they start to bud in the Spring or after they have blossomed. Shaping and removing dead wood works best when the tree is dormant. That means anytime in the fall after the leaves have dropped off.
