"By George" is a linguistic corruption of "by Jove". "By Jove" entered into the English language in or around the 1500s as a way of invoking god without actually using the word "God", which was considered blasphemous.

"By George" is an old British exclamation that developed as a poke at King George (by a christian population that was superstitous about using the more common interjection "by god") and was heavily used until recently. This type of word/phrase usage is called an "expletive attributive".

The usage "I think she's got it ! By George, she's got it" occured in the 1956 stage musical "My Fair Lady", as written by Alan Lerner. In turn, it was much more widely popularized because the hit 1964 film version, which quotes the stage musical, was widely seen.

It was then corrupted, by popular usage, to "By George I think you've got it" and other combinations.
