Curry, the spice, is in fact a mixture of many herbs and spices, coming from many different plants.
My personal favorite recipe for curry powder is as follows:
1/2 tsp ground clove
1 tsp ground cinnamon
1 Tbsp fennel seed
1 Tbsp turmeric
1 Tbsp whole coriander
2 Tbsp cayenne pepper
2 Tbsp ground ginger
1 Tbsp fenugreek
1/2 Tbsp dried mustard powder
1 tsp ground cumin
Place everything in a coffee grinder and reduce to a fine powder.
