Thyme is a an ingredient in many different cuisine's. Some examples are: Italian, Spanish, Middle Eastern, Portuguese, and Greek.
Thyme can be used to flavour different types of meats (ex. Lamb, pork), soups and stews. It is an ingredient in bouquet Garni, and in herbs DE Provence. Recipes will measure thyme in different ways. It may measure thyme by the sprig, or by the tablespoon or teaspoon . When a recipe does not specify fresh or dried, assume it means fresh.
If there is a need for substitution, substitute 1 teaspoon of dried or ¾ tsp of ground thyme for 6 small sprigs. Thyme releases its flavours slowly so it is usually added earlier in the recipe.
Recipes
Herb Pork Roast
MIX 2 teaspoons seasoned salt and 1 teaspoon Ground Thyme.
COAT 1 boneless pork roast (about 2 pounds) with herb mixture.
ROAST in preheated 350ºF oven 1 hour or until desired doneness.
If desired, prepare Ginger Peach Glaze by mixing 1/2 cup peach or apricot preserves, 2 teaspoons Worcestershire sauce and 3/4 teaspoon Ground Ginger. Spoon over pork during last 10 minutes of cooking.
Baked Chicken
Ingredients
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp ground red pepper
1/2 tsp ground thyme
8 skinned and boned chicken thighs
3/4 c honey, divided
3/4 c Dijon mustard ,divided
2 garlic cloves, minced
1 c finely chopped pecans
1/2 tsp curry powder
Garnish: Sprigs of Italian parsleyHow to make it
Combine first 4 ingredients;sprinkle evenly over chicken in shallow dish. Stir together 1/2 c honey,1/2 c mustard,and garlic,pour over chicken. Cover,chill 2 hours
Remove chicken from marinade, discarding marinade. Dredge chicken in pecans; place on a lightly greased rack in an aluminum foil-lined broler pan.
Bake at 375 for 40 mins or till chicken is done.
Stir together remaining 1/4 c honey, remaining 1/4 c mustard and curry powder; serve sauce with chicken. Garnish ,if desired
How much ground thyme do I use in place of chopped thyme
Some recipes may call for ground thyme while others specify thyme leaves. Quite often, thyme leaves are fresher and have a stronger flavor.

How big a sprig? You must be specific. But 1/2 tsp dry ground thyme = 1 tsp fresh thyme if that is any help. That's the leaves not including the stem.

Dried herbs are normally twice as strong as fresh, so 1/2 a tsp.
The definition of thyme is any of numerous plants belonging to the the mint family.
You can't really measure it that way, despite what the books say, which I very much refute on. It's said that 1 tsp of ground thyme is equivalent to 2 and half tablespoon of fresh thyme. But it changes when you blanch your fresh thyme first - That's when they are activated. Their smell goes stronger, their 'stem' bursts out in flavor and everything in the herb goes wild. Same goes to other strong herbs like dill, rosemary, etc.
Ground Rosemary For pork, lamb or potato recipes, rosemary works well as a substitution for thyme.
