The truth is that once you ask in terms of the entire region, there really aren't too many significant differences between the countries like Libya, Israel, Lebanon, Jordan, Egypt, etc. As a nomadic culture for centuries, and as the crossroads between Africa and Europe/Asia, there has been a lot of movement and the food travel along as well.
Virtually all Middle Eastern cuisines include local ingredients like dates, figs, raisins, goat/sheep meat and milk, yogurt, olives, raisins, cinnamon, coriander, garlic, barley, chickpeas, nuts of all kinds, cucumber, etc... the list goes on and on, but you get the idea. Due to less rain and natural irrigation, there is less of an emphasis on a broad variety of vegetables as in the well-known Mediterranean diet.
