Bags are filled with nitrogen, either pure or mixed with carbon dioxide, not so much to keep them inflated (that could be done with air), but to displace the oxygen, which would cause the oils to go rancid.

Nitrogen[N] is put in Crisps bags to keep them fresh. It is Oxygen which spoils the crips by oxidising them and making any fats or oils go rancid and water vapour in air makes them go soggy. So oxygen and water vapour which is about 20% of the air is removed and the remaining 80% is mostly Nitrogen, which does not react with the crisps.

It used to be nitrogen, but in the last few years the crisps manufacturers have started matching their production to their sales, so the chips sell before they get stale.
