Honestly, that's an incredibly broad question. Almost like asking "What kind of tires are on cars?". There are tens of thousands of different varieties of fungi that can be consumed.

As far as I know, Mushrooms (In general) are about 90%+ water and hardly contain any nutrients at all. Someone may correct me, but than again, the question was broad so my answer was broad.
