New Zealand's population can be split into two groups based on when they arrived here. The Maori came first and lived here in isolation for centuries, evolving their own language, traditions and customs prior to the arrival of Europeans. The Europeans, and other later arrivals from Asia and throughout the rest of the world, brought with them the traditions and customs of the lands and peoples they came from. If by traditional NZ customs you mean customs unique to this land, you would need to look principally at Maori traditions and customs. Distinctively NZ events would include Waitangi Day (6 February) and ANZAC Day (25 April - shared with Australia).
