Benjamin Tabart wrote the first print version in 1807. However, it was a much older story, and it seems that the version rewritten by Joseph Jacobs in 1890 was closer to the original. In the original, Jack was a thief and murderer, but Benjamin Tabart made the giant the bad guy in his version, thus transforming Jack into a hero. Joseph Jacobs version removed the revisionism.

Roald Dahl is NOT the author. Are you serious? Even IF he were alive in 1890, when the 1st printed version of the story appeared, and he WASN'T (b: 9/13/1916, d: 11/23/1990) the story doesn't have even the most remote resemblance to any of the other tales that Dahl did write, the most well-known being "Charlie And The Chocolate Factory" & "In The Night Kitchen. So I don't know where on earth someone would "answer" this question except to mess with people. The author is unknown. According to both Wikipedia and Suite101.com, the fairy tale is said to have come from previous similar stories passed down through oral tradition and has its roots in religion, mythology and folk tales.
