It really depends. Many cooking labs are like a hierarchy-- there are people on top (the chefs) and their assistant chefs, and at the lower end of the hierarchy are the people who do the cleaning in the kitchen. Often, even the people who clean are there to learn the business, and they hope to work their way up. Most test kitchens and cooking labs have automatic dishwashers and dryers. The people assigned to get the dishes clean will take care of that chore as part of their kitchen duties. Some test kitchens and cooking labs rely on low-skilled workers (who are often immigrants) to wash and dry the dishes, but this is not the case in every kitchen or lab.
