Different gene pools simply have different features. Eye and hair color in Asians is not unusual in other populations (e.g. Caucasians and Africans and Native Americans can all have similar hair and eye colors). Asian body types (longer torso, shorter legs) are also common in other populations (e.g. Finno-Ugric peoples). The eye fold that is characteristic of most Asians also occurs from time to time in people of other races. All human beings arise from the same genetic basis, but gene pools over time create different "looks" to different populations. If you consider that Finns and Greeks are both Caucasian, for instance, yet look incredibly different from each other, this point should be clear.

Why do Asian peoples, specifically those from eastern china and old Siam look similar? What environmental conditions required them to look the way they do?
White people evolved to look the way they do for obvious reasons (lack of sun required lighter pigmentation). So Asian people are obviously whiter than those from Africa, but didn't they evolve the same way. For instance, Northern Europeans can have a range of different "obvious" features. Blue, green, brown, black, hazel eyes. Red, brown, blonde, black, hair and vairiation of each. Why do Asians all have black hair and dark eyes? Again, what was it in their environment that required light skin pigments but dark hair and eyes? As well, why would a rounder, flatter face benefit those living in the orient?
Scientists generally agree that all people originally migrated from Africa and took different routes. The Asians were isolated from the rest of humanity in East Asia for about 40,000 years due to the last known ice age. They were basically stuck. However, if you look at the people of the Khalahari desert in Africa, they and Asians have a lot of similarities. Both have eyes with epicanthal folds and small body types. If you have ever seen the movie "The Gods Must be Crazy" the natives are Khalahari tribes people. They are the last living, direct descendants of the first people.

The eye fold common among Chinese and other people from the Far East possibly developed gradually as protection from bright sunlight. Those with an eye fold were less likely to suffer from cataracts giving them a breeding advantage.
Asian eyes developed, supposedly, when early humans migrated from Africa into Asia (particularly northern Asia; you will find that Indians, Burmese, and southern Asians in general do not have such profoundly thin eye openings; the further north the nation, the smaller the eye opening tends to appear). As they moved north into Mongolia, Siberia, and other areas that were extremely cold, the opening of the eyes thinned and narrowed, and they produced an extra lining of fat and skin on the upper eyelid, to help protect them against the wicked blizzards that would whip snow at their faces. This is the same idea as why negroes in Africa have very dark eyes and skin; the extreme amount of sunlight causes them to produce more melanin and dark eyes absorb more sunlight, which there is a lot of in Africa. Conversely, people further north have lighter skin and eyes because the colder it gets, the less sun there tends to be (meaning not as much melanin is produced), and light eyes which reflect sunlight help eliminate snow-glare from sun shining on banks of snow, making it easier to travel and hunt and not be momentarily blinded (which could mean life or death for early people).

Albinos have red eyes due to red retina being visible through the iris as their eyes do not enough pigments to color the eye. Due to a translucent iris and poor absorption of light by retina, light is scattered in the eye exposing the blood vessels underneath. That makes the eyes of an albino to appear red.

If the Chinese people squint, it's for any reason that people of other races would squint. The Chinese stereotype is that their eyes are smaller than people of other races, and that is often the case, but it's not like they always squint to make their eyes smaller.
