Well all the fire trucks that I have seen have been red maybe some are other colors but the reason that they are red is so people can distinguish from the color that it is a fire truck.

In the early days of firefighting, departments that were well-funded were looking for ways to show off their equipment. Red vehicle paint very rare, due to the difficult process to make it. So, these departments painted their trucks red to show off their trucks, and the tradition has continued.

Many departments have added WHITE to their RED fire trucks because it is more visible at night and the cost of the paint job is less.
So that they are easily spotted, i.e., distinctive colors, indicating a special vehicle.
In reality, fire engines are also found in other colors: white, green (light or dark), yellow, and even blue.
