Early use of flowers at funerals stems from their use to help with the odor of the dead. Other uses however have been for such things as showing respect and love for the person who died, and are a means of showing support and sharing the burden of grief with the family.

We put flowers on someone's grave to recognize that they were here, and that they are remembered even after they are gone.

The Egyptians would surround the dead with their worldly possessions so they might have such nice things in the afterlife. The Mexican tradition of Dios de Los Muertos includes having picnics on graves, and cooking the deceased's favorite foods to recognize their presence even after they are gone. The Greeks would place money in the deads' mouths so they could pay Charon to ferry them across the River Styx, so that they might enter a wonderful afterlife.

So we place flowers, or boats, or precious things on graves to let them know that we are thinking about them; even though they are gone, we like to think that somehow they know we are loving them, or we want them to forgive us for something. We do it out of remembrance.

Many cultures do NOT put flowers on graves. In many cultures, cut flowers are rarely given as gifts to live or dead friends and relatives (it is bad luck to kill a living thing by cutting it).

Jews do not put flowers on graves. Instead you will see small pebbles or stones on the top of gravemarkers to indicate that the grave had been visited.

People put flowers over graves, people pray to photographs of their ancestors who left long ago, people break coconuts in temples and people do many other things which are rituals, which they have been taught to do. This may or may not have any logic, but most people don't ask questions, investigate and realize the Truth because they think it is blasphemous to question their religion. If we truly love God and want to realize God, we should ask questions. Why should we put flowers over the grave? The person has returned to dust. Who am I offering these flowers to? What is the benefit of these flowers over the grave? Should I not spend the same money feeding somebody who is hungry? These are the questions that we should ask to realize the Truth.

They are put simply for rememberance of that person. It's a great way to let them know you are still thinking of them. Some people say a prayer for the deceased's soul while they are there.
