For thousands of years the heart was the soul, therefore love came from the heart. During Roman times Cupid (a god) and not a mortal would shoot an arrow into the heart of someone and then another to form a coupling. The heart signifies life and if you give your heart to someone it means to handover to her or him one's existence.
