Because they spent many months growing inside a protected environment being supplied with all the nutrients they needed to grow and only urinated in the womb. Once they are born, sounds are louder, they defecate and urinate in a diaper that can burn their sensitive skin if left for too long, they are getting used to the feeling of being hungry, and the lull of hearing their Mother's heartbeat which was likely quite soothing is gone as well.
