Because plants are the only thing that are able to convert the suns energy into food and in the process convert the carbon dioxide that animals make eating each other and plants back into oxygen. And that is just for starters.

Plants are important to the earth because they take in the carbon dioxide in the atmosphere and replace it with oxygen. If they did not do so then the planet would gradually fill up with carbon dioxide and heat up so that life could not exist on the surface. When plants die they lock some of the carbon dioxide underground and eventually form oil, coal and natural gas.
