Because humans like to waste precious minerals by dangling them around and from our ears, necks, wrists and fingers as signs of affluence and status symbols. What better way to say 'I have more money than I know what to do with' than to craft a ring out of gold rather than using it for a more practical use?
It could be argued that females have evolved to take a shine to sparkly things as they, and males also, consider their shiny adornments attractive. They arguably draw attention to the more feminine features and draw attention away from flaws.
And also because gold is precious, people feel it shows how much they value marriage.
