Because by the 8th season (when she left) she was kind of being used as a prop. They would just stick her in anywhere after she got married because they wanted to show the audience that she was still there and all, but she didn't want to be used for that or be treated like that so she left the series. There is an interview of her on you tube and she explains why she left.
