Three reasons are possible depending WHEN the jar(s) broke.

1) IF the jar lids were screwed on VERY tightly before placing them in the canner (hot water bath method. They could explode within the canner... (no problem, just a little messy to clean up)


2) If the jar(s) CRACK within the canner (old jars or cheap "thinner" jars. The mess won't show up until you pick up the jar out of the canner (again, a mess but no safety problem unless you have the jar close to you and it doesn't let go until it is clear of the canner. SO...be somewhat careful taking them out of the canner. Use a proper jar lifter that is coated with plastic, wooden handles, etc.


3) IF YOU HAVE SOME OF THE NEWER JARS FROM Kerr, Ball, etc (all the same company now) watch out. This summer, we had a jar EXPLODE in the air while lifting it from the canner o a cooling board. THE JAR BROKE INTO A MULTITUDE OF PIECES AND BLEW HOT PRESERVES ALL OVER THE KITCHEN. Why we never got scalded, I have no idea (just lucky I guess.) We have canned for about 35 years and have NEVER had a jar explode before. The ODD one will crack in the canner while being processed but NEVER in the air. I checked the jars closely....They WERE a NEW batch we purchased this year. The walls of the jars LOOKED far thinner than all of our OLD jars.


SO...older jars, finger tight on the lids should be no problem. New jars...I would let them cool down a few minutes (with the heat off under the canner) to take a little of the pressure off before lifting them out.
