Short answer: He did not refuse to work with Poitier.

According to Lee Server's fine biography of Mitchum, it was the movie's premise that Mitchum had a problem with, saying that no black man and white man would ever have been chained up together in that part of the country. Mitchum had some experience in that matter, having been arrested for vagrancy in the South when he was a teen, and being sent to work on a chain gang.

Because of people like Tony Curtis, who never let facts get in the way of a good tale, a false story painting Mitchum as racist has been circulating for many years.
