I dont know what era or year your refering to, but generally Jewish and Christianity share the same story of creation and we both follow the Old Testament. The Torah is based on the old testament in The Bible. So we arn't we off, the only difference is that Christians believe that Jesus was the chosen on, Jewish are still waiting for the chosen one. So i guess Jewish convert to Christianity because we are probably the closest considering we share the same roots.

Early Roman Period

The gospels speak of thousands of Jews coming to listen to Jesus. Many Jews were said to have been eyewitnesses to his miracles and could only have believed.

Acts of the Apostles continues this theme, with just three occasions resulting in numerous conversions: three thousand baptised on just one day (2:41); five thousand who believed on another occasion (4:4); at another time, many were baptised (10:45-48). According to Acts, the sick and lame came just to have Peter's shadow fall on them, so that they would be healed, and Peter performed many miracles that would have convinced even the most skeptical. Acts 21:20 talks about "how many thousands of Jews" there are which believe.

Those are the reasons the Jews should have converted to Christianity. Yet, it seems that they did not do so. By the end of the century, only a small minority of Jews seem to have been Christians.

Late Roman Period and Medieval Period

Many Jews converted to Christianity in Middle Ages to escape persecution and expulsions or for the political and economic opportunities that came with conversion. Being a Christian in European Medieval Society insured protection from the persistent pogroms and massacres. For Jews who valued their faith less than their security, conversion seemed appropriate. Of course, there were also Jews who saw the validity of Christian claims and converted on that account, but such conversions were minimal. In fact, many Jews who converted secretly practiced Jewish rituals at times (like the Spanish Inquisition) when discovery of such doings would lead to torture and death.

Modern Period

Far fewer Jews converted to Christianity in the Modern Period, because Jews were emancipated in the Modern Period. There has been a small trickle of Jews converting to Christianity because of its theological claims or not wishing to stick out in societies with very small Jewish populations, but this remains minimal.

Why was the apostle Paul significant to the spread of Christianity?

Paul made Christianity a religion which was accessible to the gentiles (the non-Jews) of the Roman Empire. Prior to this the Christians were Jews who saw Jesus as the promised messiah of the Jews, preached the word of Christ in Judea to fellow Jews and and still followed Jewish laws, customs and rituals and went to the synagogue Paul created a theology based on Christ, rather than on the Mosaic Law and established the fundamental beliefs of Christianity: that God sent his Son who was crucified for the benefit of humanity and that his resurrection brought the promise of salvation to believers. He said that to be a Christian you needed to have faith in Christ and follow his teachings. This was enough for salvation. He distinguished Christianity from Judaism by saying that humans are saved from sin by faith and not by following rituals or a law as the Jews believed. You did not have to follow Jewish law and you did not have to be a Jew.The Torah was not necessary for salvation, Jesus alone was decisive. Thus, gentiles (non-Jews) could convert to Christianity . Paul made Christianity accessible to everyone and laid the foundations for the conversion of the anyone in the Roman Empire.
