"Holy Books" are important because they are a constant reference that believers can consult for guidance on their practices. Some religions relied on "word of mouth". This lead to "selective memory". People still "interpret" the meanings differently. Many believe the "Book" was divinely revealed to special people.

Depends on what religion you are talking about. The holiest book to Jews is The Bible (Old Testament only) and most holy, its first 5 books (the Torah). Christians consider the entire Bible holy, though with more emphasis on the New Testament. Muslims consider the Quran (Koran) their holy book.
