You could also ask why Christians believe that people go to Heaven or Hell after they die, and Hindus do not. You would think that if people are reincarnated, that would be very easy to verify, since people would remember their past lives and would be born already knowing how to speak, and so forth (at least they would have such knowledge if they had been human beings in their previous life; Hinduism includes the idea that some incarnations are in the form of animals). Yet it is accepted that people forget their past lives, due to the trauma of death. So in either case we have claims about life after death that have never been verified. People claim these things because they have had some kind of divine or supernatural revelation.

Well, the gods are indecisive. They tell one person one thing and then tell something else to other people. The reality of life after death, whatever it may be, is something that you will never know while you are alive. However, you are free to believe what you like.
