Samoans celebrate by inviting international dignataries, raising the Flag, performances - dancing, etc, etc, competitions, longboat racing, international acts are brought in to perform singing, dancing, etc, etc, using Samoans well known singers, dancers, wrestlers, sports people to perform, etc, etc.
There is just one Day of Independence (from Spain): September 16th.
Every country has their own independence day and they celebrate it from different countries. Ex: for the US it is July 4th, independence from the United Kingdom
Generally people celebrate it as our "Independence from the British empire," Because it marks the day they finished signing the Declaration of Independence. It's basically America's birthday. I, however, watch the Will Smith movie Independence Day on Independence Day and celebrate not having our world nearly taken over by horrible aliens thanks to wise-cracking jet pilot and some random scientist dude.
Polish people celebrate Christmas and Easter. They also celebrate Constitution day, All Saint's day, and they celebrate their Independence Day in November.
