Organisms need water because the chemical reactions that maintain life occur on the inside of cells which contain cytoplasm, a water-based solution. If organisms did not have water, the chemical reactions in the cell could not take place, and life functions would cease.

An organism needs water to live because water is one of the main components that cells need to live. The body needs fluids to work also.*edit; In the human body, water is continually moving in and out of the red blood cells at a truly astonishing rate. In just a single second the water transfer is 100 times the volume of the red cell.

Assuming two litres of red blood cells in the body, that means a total of seventeen million litres of water go in and out of them each day. Thank goodness for recycling.
