Traditionally, because women were seen as the property of their husbands, and a husband and wife were viewed legally as one entity and that entity was the husband.

Currently, it is still done in many cases to make family life easier (i.e. everyone in a family has the same name) or within religious or conservative cultures where the husband is still considered to be the authority in the family. Many women prefer to take their husband's name.

However, in many cases women in Western cultures retain their own names, use hyphenated forms of both names and some men actually take their wife's name.
