Moulds are microscopic fungi. Mould spores arrive on the burger (after it has been cooked as thorough cooking kills existing spores) either through contact with contaminated objects, or carried in the air. These spores then grow and feed off the nutrients in the burger.
My guess is the unnatural preservatives that they're drenched in. And EVENTUALLY, the burgers mold. It's the fries that don't... hope it helped! ^^
