Arthritis pain can be the result of several things. for example Inflammation in and around the joints can be excruciating one day and gone the next especially if you treat it with some sort of anti inflammatory. sometimes bits of damaged cartilage or even bone that have come loose can be floating around in there and that can also be very painful. If cartilage is completely worn away and you are walking bone on bone you also experience considerable pain, add to this the muscles and ligaments surrounding the knee and you end up with a fair choice of either some or all of the above.
