Usually to fit in with who they are hanging around, mostly people do this because they don't know who they REALLY are as a person themselves. Sometimes it is because they want to change who they are in small ways and are comfortable with certain people therefore they act accordingly.
Sometimes it's not worth the hassle of being honest with people. For example, a few people tried giving a coworker advice and then she turned against all of them. They were right and just trying to help. She saw it as them "going against her."
Sometimes people will act fake just to make their own lives seem more exciting... most of the time they are insecure about themselves.
