Therefore, "poorer foods" - such as Hoppin' John (black-eyed pea dish), cabbage (sauerkraut) and pork (whether hog jowls, pig's feet or just pork roast) - are served on New Year's Day.

Because it tastes good. Hog jowl is eating in the south at New Years to bring good health in the coming year. You cook with Black eye peas, which are thought to bring luck and Turnip or collard greens for money. And because they taste good!

My family has it this way: Healthy, Wealthy, and Wise. Which is which is open to interpretation. We have had various degrees of each so the empirical evidence is also open to debate.
