They have always rubbed there coat in the snow that the fur has adapted to the color. they do this to survive from there prey (usually hunters or things in the sea). if they went into the tropical most likely after the bear rolls in the dirt it will become brown and not white
In fact, polar bears look white because their fur is semi-transparent and it looks white to the naked eye. The fur is this way because they have always lived in the polar region and at first the individuals that were darker probably had it tough for hunting since their prey would see them coming from far. The individuals with pale fur would meld with the snow and therefore have more food and escape predators (I'm not sure they ever had any predators). So those with clear fur could reproduce and have babies with their genes (the clear fur) so nowaday polar bears are «white».
