First, make sure this isn't happening because the potatoes have gone bad or that there is mold. Once that is ruled out, it is most likely just because of air exposure. Think, apples turn brown when left out in the air too long. This can happen to any fruit or vegetable as it is left without moisture or left to airate for a while. The potatoe is still edible, as it is just the outermost layer that has been exposed.

When the flesh (inside) of a potato is exposed to air for to long they will turn black because the oxygen is reacting to metal natural inside the potato. This can also happen when potatoes are stored below 40 degrees (often in a refrigerator).

A chemical in the potato reacted to oxygen. If you cover them in cold water before using they shouldn't turn black.

How do you keep sliced raw potatoes from turning black?

Most likely, this discoloration is due to a reaction between your knife and the potato. Some metals turn potatoes a weird color.
