Textbooks often present information as certain to simplify complex topics for readers and provide a foundational understanding. This approach helps students grasp key concepts before delving into nuances and exceptions. However, it's essential for readers to understand that knowledge is subject to updates and revisions.

Because usually it is.

Textbooks present information as if it were true because their purpose is to present correct and valid information. Incorrect information has no value in a learning environment, unless it is identified as such and is used to illustrate aspects of error.

I'm not sure that you are correct, although when I was at Grammar School our Physics and Chemistry books were still teaching that "Matter can neither be created nor destroyed." at a time when scientists had already split the atom. Textbooks tend to deal with facts, whether in mathematics or sociology, when the students reading them are well aware that there are plenty of "facts" still to be proved or found to be untrue. Perhaps another factor is the cost of text books. Are they built to last, or is the school unable to fund more modern versions? A very good question!!
