The valves are probably not changing size from the heat. It's more likely something is causing the cam to wear out, such as a lifters that are not revolving, the nuts are backing off, or your valve adjustment procedure is flawed.

Most manufactures didn't use a gasket when materials were the same (i.e cast iron manifold and cast iron head). They do this because the materials will expand and contract when heated and cooled at the same rate. Once you break that seal you may never get it perfect again so I would use a gasket. It won't hurt to use one. When I rebuilt my Chevy 350 in my Firebird there was no gasket between the exhaust manifolds either. There also wasn't any gaskets between the intake manifold and the intake runners. Both are made of aluminum and expand and contract at the same rate.
