Canker sores (mouth ulcers) may be caused by irritation by certain foods, by activity of the immune system, or by injuries, such as bites or cuts to the mucous membranes of the mouth. There is no single mechanism identified for sporadic or chronic sores. They occur within the tissue but may erupt or become infected.

Usually spelled canker sore in the US. There are several known causes: 1) Trauma, such as accidentally biting the inside of your cheek, piece of a potato chip jabbing your gums, broken tooth, etc. 2)Food allergy--citrus fruits are one type known to cause canker sores 3)Malnutrition--certain vitamin or mineral deficiencies 4)Illness--often viral, Though it is rarely cancer, it can be, so canker sores that have not healed after 2 weeks should be examined by a doctor.
